Description
Grilled Skirt Steak Gyros made with juicy marinated steak, grilled vegetables, and creamy yogurt sauce wrapped in warm pita bread.
Ingredients

- 1/3 cup extra-virgin olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried mint (optional)
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Kosher salt
- Black pepper
- 1/2 cup plain Greek yogurt
- 1 green bell pepper, sliced into rings
- 1 onion, sliced into rounds
- 1 pound skirt steak
- 4 pocketless pitas
- 1 tomato, chopped
- 1 bunch watercress, chopped
Instructions
- Preheat grill to medium-high heat
- Whisk olive oil garlic mint oregano paprika salt and pepper in a bowl
- Transfer 1 tablespoon marinade and mix with yogurt and water to make sauce
- Add bell pepper and onion to marinade and toss
- Coat skirt steak in marinade
- Grill vegetables about 4 minutes per side until charred
- Grill steak 4 to 8 minutes per side depending on thickness
- Remove steak and let rest for 5 minutes
- Grill pitas about 1 minute per side until marked
- Slice steak against the grain
- Fill pitas with steak vegetables tomato and watercress
- Drizzle with yogurt sauce and serve

- Let steak rest before slicing to keep juices
