Description

A hearty baked casserole made with seasoned ground beef, vegetables, creamy soups, mashed potatoes, and melted Cheddar cheese.


Ingredients

  • 8 large russet potatoes, peeled and chopped
  • 1 pound lean ground beef
  • 1/2 cup chopped onion
  • 1 (15-ounce) can carrots, drained
  • 1 (15-ounce) can green beans, drained
  • 1 (10.5-ounce) can condensed cream of mushroom soup
  • 1 (10.5-ounce) can condensed tomato soup
  • 3/4 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Boil potatoes in salted water until tender, then drain and mash.
  3. Brown ground beef with onion in a skillet and drain excess fat.
  4. Stir vegetables and soups into the beef mixture.
  5. Spread beef mixture into the baking dish.
  6. Top evenly with mashed potatoes and sprinkle with cheese.
  7. Bake uncovered for 30 minutes until heated through and lightly golden.

Notes

  1. Substitute corn or peas for carrots or green beans if desired.
  2. Season mashed potatoes with garlic powder or black pepper.
  3. Store leftovers in the refrigerator for up to three days.
