Description

Cheesy ground beef zucchini casserole layered with marinara sauce, ricotta, mozzarella, and Parmesan for an easy low-carb family dinner.


Ingredients

Scale
  • 1 lb ground beef
  • 3 medium zucchinis, sliced into 1/4-inch rounds
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp olive oil
  • Fresh basil leaves for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet and cook onion and garlic for 3 to 4 minutes.
  3. Add ground beef and cook until browned.
  4. Stir in marinara sauce, oregano, salt, pepper, and red pepper flakes. Simmer for 5 minutes.
  5. Mix ricotta cheese with half of the mozzarella cheese in a bowl.
  6. Grease a 9×13-inch baking dish and layer zucchini slices on the bottom.
  7. Spread half of the beef mixture over the zucchini.
  8. Spread half of the ricotta mixture over the beef layer.
  9. Repeat the layers with remaining zucchini, beef mixture, and cheese mixture.
  10. Top with Parmesan cheese.
  11. Bake for 25 to 30 minutes until bubbly and golden.
  12. Rest for several minutes and garnish with fresh basil before serving.

Notes

  1. Salt zucchini slices and pat dry if excess moisture is a concern.
  2. Store leftovers in the refrigerator for up to 4 days.
  3. Freeze portions for up to 3 months.
