Description

Creamy Hawaiian Chicken Salad made with chicken, pineapple, eggs, corn, and cheese. Served chilled for holidays or gatherings.


Ingredients

  • Cooked chicken breast, diced
  • Hard-boiled eggs, chopped
  • Canned corn, drained
  • Canned pineapple chunks, drained
  • Mayonnaise
  • Shredded semi-hard cheese
  • Salt

Instructions

  1. Dice the cooked chicken into bite-sized pieces and place in a bowl
  2. Chop the hard-boiled eggs and add to the bowl
  3. Drain the corn and pineapple well and add to the mixture
  4. Add shredded cheese and mix gently
  5. Stir in mayonnaise until evenly coated
  6. Taste and add salt if needed
  7. Refrigerate for 30 minutes before serving

Notes

  1. Substitute half of the mayonnaise with Greek yogurt for a lighter option
  2. Use smoked or rotisserie chicken for deeper flavor
  3. Store in an airtight container for up to 3 days
  4. Serve well chilled
