- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup shortening
- 1 1/4 cups sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon imitation almond extract
- 1 large egg
- 3/4 cup crushed pineapple, well drained
- 1/2 cup shredded coconut, finely chopped
Instructions
- Preheat oven to 325°F.
- In a large bowl, mix flour, baking powder, and salt. Set aside.
- In another bowl, cream shortening, sugar, vanilla extract, and almond extract until smooth.
- Beat in the egg until the mixture becomes fluffy.
- Mix in the drained pineapple, then combine with the dry ingredients.
- Drop dough by teaspoonfuls 3 inches apart onto an ungreased cookie sheet.
- Sprinkle with shredded coconut.
- Bake for 18–20 minutes until edges are lightly browned.
- Let cookies rest for 2 minutes, then transfer to a wire rack to cool completely.
Notes
Drain pineapple thoroughly to avoid excess moisture.
Do not overcrowd the baking sheet.
Monitor baking time closely to prevent overbrowning.
Store in an airtight container for up to 4 days.
