Description

Healthy chicken burger with cottage cheese bun made with lean ground chicken, soft homemade cottage cheese buns, and fresh vegetables for a balanced, high-protein meal.


Ingredients

Scale
  • 7 oz cottage cheese (5–9% fat)
  • 1 large egg
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Sesame seeds
  • 1 egg yolk
  • 34 oz ground chicken
  • Salt
  • Black pepper
  • Optional spices (paprika, garlic powder, or Italian seasoning)
  • 1 tablespoon Greek yogurt
  • 1 teaspoon tomato paste
  • 1 teaspoon Dijon mustard
  • 12 lettuce leaves
  • 1 medium tomato
  • 12 pickles or small cucumbers

Instructions

  1. Mash the cottage cheese until mostly smooth and mix with the egg
  2. Add flour, baking powder, and salt and stir to form a soft dough
  3. Divide dough into two buns and place on a parchment-lined baking sheet
  4. Brush buns with egg yolk and sprinkle with sesame seeds
  5. Bake at 375°F for 20–25 minutes until lightly golden, then cool and slice
  6. Season ground chicken with salt, pepper, and spices and form patties
  7. Cook patties in a nonstick skillet for 4–5 minutes per side until cooked through
  8. Mix Greek yogurt, tomato paste, and Dijon mustard to make the sauce
  9. Assemble burger with sauce, lettuce, chicken patty, tomato, and pickles

Notes

  1. Drain excess liquid from cottage cheese if very wet
  2. Whole wheat flour can be used but buns will be denser
  3. Store buns in the refrigerator up to 2 days or freeze for longer storage
