Description

Crispy and healthy sweet potato hash browns made with simple ingredients for a naturally flavorful breakfast side.


Ingredients

Scale

2 tbsp vegetable oil

2 tbsp grated onion

1 large sweet potato, peeled

2 eggs

1 tbsp all-purpose flour

1/4 tsp kosher salt


Instructions

1. Preheat oven to 350°F.

2. Coarsely grate the sweet potato.

3. Soak grated potato in cold water, drain, and squeeze dry.

4. Mix sweet potato with onion, eggs, flour, and salt.

5. Heat oil in skillet over medium heat.

6. Scoop mixture and flatten into patties.

7. Cook 3-4 minutes per side until golden.

8. Transfer to baking sheet.

9. Bake 10–12 minutes for crisp texture.

10. Serve warm with sour cream or yogurt.

Notes

Squeeze sweet potatoes very well to remove moisture.

Cook in small batches for best browning.

Air fry leftovers at 375°F for 3–4 minutes.
