Description

This easy healthy zucchini tomato bake combines fresh zucchini, juicy tomatoes, garlic, Parmesan, and Italian herbs in a colorful 30-minute vegetable side dish.


Ingredients

Scale
  • 2 1/2 pounds zucchini, quartered lengthwise and cut into bite-size pieces
  • 10 ounces grape tomatoes, halved, or 2 large tomatoes, diced
  • 5 large garlic cloves, minced
  • 1/2 cup finely grated Parmesan cheese
  • 1 teaspoon dried basil and oregano, or Italian seasoning
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup finely chopped fresh parsley or basil
  • Cooking spray for the baking dish

Instructions

  1. Preheat the oven to 350°F. Lightly coat an 8-by-8-inch or 9-by-11-inch baking dish with cooking spray.
  2. Wash and dry the zucchini and tomatoes. Cut the zucchini into similar bite-size pieces, and halve the grape tomatoes or dice the large tomatoes.
  3. Add the zucchini, tomatoes, minced garlic, Parmesan, dried herbs, salt, and black pepper to a large mixing bowl.
  4. Toss until the vegetables carry an even coating of cheese and seasoning.
  5. Transfer the mixture to the prepared baking dish and spread it into a level layer.
  6. Bake uncovered for 25 minutes for tender-crisp zucchini, or bake for 30 to 35 minutes for softer vegetables.
  7. Check the zucchini with a fork after 25 minutes and remove the dish when the pieces reach your preferred tenderness.
  8. Sprinkle the bake with chopped parsley or basil, rest for 5 minutes, and serve warm.

Notes

  1. Use a wide baking dish so excess moisture can evaporate.
  2. Do not salt the zucchini in advance because it will release water.
  3. Store leftovers in an airtight container in the refrigerator for up to 5 days.
  4. Reheat leftovers in a 350°F oven, an air fryer, or the microwave.
  5. Do not freeze because thawed zucchini and tomatoes may become watery and mushy.
