Description

A classic Scandinavian-style herring appetizer served on crispy potato rounds with cream cheese, pickles, and marinated onion.


Ingredients

Scale
  • 2 large russet potatoes
  • 7 oz herring fillets (Matjes-style or lightly pickled)
  • 23 dill pickles
  • 2 tablespoons vegetable oil
  • 3 tablespoons cream cheese
  • 1 medium red onion
  • Fresh parsley, finely chopped
  • 3 tablespoons white vinegar
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup warm water

Instructions

  1. Slice red onion and marinate in vinegar mixture for 1 hour.
  2. Boil whole potatoes in salted water until fork-tender.
  3. Slice potatoes into thick rounds.
  4. Pan-fry potato slices in oil until golden and crisp.
  5. Dice herring and pickles into small pieces.
  6. Spread cream cheese on potatoes.
  7. Top with herring, pickles, and marinated onion.
  8. Garnish with parsley and serve.

Notes

  1. Add black pepper or lemon juice for extra flavor.
  2. Yukon Gold potatoes can be used for a creamier texture.
  3. Store assembled appetizers up to 12 hours; add parsley before serving.
