Ingredients
Scale
- 10 ounces salted or pickled herring fillets, finely chopped
- 2 tablespoons finely diced red onion
- 3 tablespoons chopped green onions
- 2 tablespoons chopped fresh parsley
- 2 tablespoons capers, drained and chopped
- 4 hard-boiled eggs, finely chopped
- 2/3 cup mayonnaise
- 1 brioche loaf or brioche slices, toasted (for serving)
- 1–2 fresh cucumbers, sliced (for serving)
Instructions
- If using very salty herring, soak it in cold water or milk for 30–60 minutes, then pat dry before chopping.
- Finely chop the herring into small, even cubes and transfer to a mixing bowl.
- Add the diced red onion, green onions, parsley, and chopped capers.
- Finely chop the hard-boiled eggs and add them to the bowl.
- Stir in the mayonnaise until everything is evenly coated and creamy.
- Taste and adjust seasoning if needed.
- Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve the tartare on toasted brioche slices and garnish with fresh cucumber slices.
Notes
- For a lighter version, substitute half of the mayonnaise with sour cream or Greek yogurt.
- Add a squeeze of lemon juice for brightness.
- This tartare can be prepared up to 1 day in advance and stored in an airtight container in the refrigerator.
- Serve as an appetizer, canapé topping, or part of a brunch spread.
