1 can (15 oz / 425 g) diced tomatoes with juices

1 cup low-sodium beef broth (240 ml)
-
½ cup plain Greek yogurt (120 g)
-
¼ cup grated Parmesan cheese (25 g)
-
1 tbsp Italian seasoning
-
Salt and black pepper, to taste
-
Fresh basil or parsley, for garnish
-
1 tbsp olive oil, for cooking
Instructions

-
Add ground beef and cook 6–8 minutes until browned.
-
Stir in diced tomatoes, beef broth, Greek yogurt, Parmesan, Italian seasoning, salt, and pepper. Simmer 5–7 minutes until slightly thickened.
-
Add cooked pasta to the skillet and toss to coat.
-
Garnish with basil or parsley and serve hot.
Notes
Save pasta water to thin sauce if needed.
Stir Greek yogurt in off the heat to prevent curdling.
Swap beef for turkey, chicken, or plant-based protein.
Top with mozzarella for extra indulgence.
Fresh herbs brighten the richness.
