Ingredients
-
800 g chicken breast, cubed (1.76 lbs)
-
3–4 garlic cloves, minced
-
2 tsp onion powder (4.6 g)
-
2 tsp mixed herbs (2 g)
-
1 tsp chili flakes (1.8 g)
-
2 tsp paprika (4.2 g)
-
1 tsp salt (6 g)
-
2 tsp olive oil (10 ml)
-
800 g potatoes, cubed (1.76 lbs)
-
1 tsp each: salt, garlic powder, mixed herbs, chili flakes, paprika
-
Olive oil or cooking spray (optional)
-
120 ml milk (any type)
-
100 g light cream cheese (3.5 oz)
-
40 g grated Parmesan (1.4 oz)
-
Extra seasoning: salt, garlic powder, mixed herbs (to taste)
-
50 g shredded mozzarella (1.7 oz)
-
Fresh parsley, chopped (for garnish)
Instructions
-
Prep potatoes: Preheat oven or air fryer to 200°C (400°F). Toss cubed potatoes with seasoning and a light spray of oil. Bake 20–23 minutes (or air fry 18–20) until golden and crispy.
-
Cook chicken: Heat olive oil in a skillet over medium heat. Add chicken, garlic, onion powder, herbs, chili flakes, paprika, and salt. Sauté 5–6 minutes until browned and cooked through.
-
Make it creamy: Reduce heat, stir in milk and cream cheese. Mix until smooth and creamy. Add Parmesan for extra richness.
-
Combine: Add crispy potatoes to the skillet, toss gently, then sprinkle mozzarella over the top. Cover and let sit for 4–5 minutes until cheese is melted and gooey.
-
Serve: Garnish with chopped parsley and serve hot.
Notes
Avoid overcrowding potatoes to keep them crispy.
Let dairy soften to prevent clumps.
Adjust spice level: swap chili flakes for smoked paprika if preferred.
Mozzarella can be swapped for gouda or cheddar.
Store leftovers in the fridge for 3 days. Reheat with a splash of milk to maintain creaminess. Potatoes may lose some crispness if frozen—store separately for meal prep.
