Ingredients
-
10 medium apples (quartered)
-
½ cup (100 g) light brown sugar (packed)
-
4 sticks cinnamon or 2 teaspoons ground cinnamon
-
1 tablespoon ground allspice
-
Water (enough to cover apples by 2 inches)
Instructions
-
Place quartered apples in a large 8-quart stockpot. Add water to cover apples by about 2 inches.
-
Stir in brown sugar, cinnamon sticks (or ground cinnamon), and ground allspice.
-
Bring to a boil over high heat, uncovered, for 1 hour.
-
Reduce heat to low, cover, and simmer for 2 more hours.
-
Allow cider to cool slightly, then strain through cheesecloth into a large bowl, pressing apple pulp to extract juices.
-
For a smoother texture, strain once more through a fine-mesh sieve.
-
Serve warm in mugs or chill for a refreshing cold cider option.
Notes
Mix sweet and tart apples (like Fuji and Granny Smith) for a deeper flavor.
Ground spices work if you don’t have whole spices.
Add cloves or star anise during simmering for extra spice.
The cider may appear cloudy—that’s perfectly normal for homemade.
Store in the fridge for up to 5 days or freeze for up to 3 months.
