Description

Juicy homemade chicken sausage made with simple ingredients and baked or air fried to perfection.


Ingredients

Scale
  • 14 ounces chicken thighs with skin, boneless
  • 14 ounces chicken breast
  • 2 tablespoons cream cheese or mascarpone
  • 3 garlic cloves, minced
  • 1 tablespoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon chicken seasoning blend
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon unflavored gelatin
  • 1 1/2 teaspoons cornstarch

Instructions

  1. Cut chicken into small pieces and grind in a food processor until finely ground.
  2. Mix ground chicken with cream cheese, garlic, salt, pepper, seasoning, and dill.
  3. Sprinkle gelatin and cornstarch over mixture and mix until sticky.
  4. Shape mixture into a log on parchment paper and wrap tightly.
  5. Bake at 375°F for 30 minutes or air fry at 365°F for 20–22 minutes.
  6. Rest sausage for 10 minutes before slicing.

Notes

  1. Process slightly longer for smoother texture.
  2. Substitute herbs as desired.
  3. Store refrigerated up to 4 days or freeze up to 2 months.
