Description

These homemade gummy bears turn real fruit or fruit juice, honey, and unflavored gelatin into colorful, naturally sweetened snacks without artificial flavors or colors.


Ingredients

  • Fruit Puree Gummy Bears
  • 1/2 cup fresh blueberries or hulled strawberries
  • 3 tablespoons water
  • 1 to 2 tablespoons honey, adjusted to taste
  • 2 tablespoons unflavored powdered gelatin
  • Fruit Juice Gummy Bears
  • 1/2 cup berry juice, grape juice, cherry juice, or preferred fruit juice
  • 1 to 2 tablespoons honey, adjusted to taste
  • 2 tablespoons unflavored powdered gelatin

Instructions

  1. Place a silicone gummy bear mold on a flat tray or baking sheet.
  2. For fruit puree gummies, blend the berries, water, and honey on high until completely smooth, then pour the puree into a small saucepan.
  3. For fruit juice gummies, whisk the fruit juice and honey together in a small saucepan.
  4. Sprinkle in 1 tablespoon of gelatin and whisk thoroughly.
  5. Add the second tablespoon of gelatin and whisk again until evenly combined.
  6. Place the saucepan over low to medium-low heat.
  7. Stir constantly for 3 to 5 minutes until the gelatin dissolves completely.
  8. Do not let the mixture simmer or boil.
  9. Remove the saucepan from the heat when the mixture looks smooth and glossy.
  10. Use an eyedropper or food-safe pipette to fill each gummy bear cavity.
  11. Transfer the mold to the refrigerator and chill for at least 15 minutes.
  12. Gently remove the gummies from the silicone mold.
  13. Serve cold for a firmer texture or let them stand briefly at room temperature for a softer texture.
  14. Store remaining gummies in an airtight container in the refrigerator.

Notes

  1. The recipe makes approximately 50 mini gummy bears.
  2. Use 1 tablespoon of honey for sweeter fruit and up to 2 tablespoons for tart fruit.
  3. Avoid fresh pineapple, kiwi, papaya, mango, and fresh ginger because their enzymes may prevent the gelatin from setting.
  4. Do not boil the gelatin mixture.
  5. Strain the fruit puree before heating for smoother gummies.
  6. Nutrition values represent approximately 10 blueberry gummies made with 1 tablespoon of honey.
  7. Keep the gummies refrigerated and enjoy them within 5 to 7 days.
  8. Do not serve honey to children younger than 12 months.
