Description

Classic peach cobbler with juicy peaches and a golden biscuit topping.


Ingredients

Scale
  • 67 ripe peaches, sliced
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter
  • 1/4 cup boiling water
  • 1 tablespoon coarse sugar

Instructions

  1. Preheat oven to 375°F
  2. Mix peaches with sugar, lemon juice, cornstarch, vanilla, and cinnamon
  3. Rest filling for 10 minutes
  4. Mix flour, sugar, baking powder, and salt
  5. Cut in butter until crumbly
  6. Add boiling water and stir into dough
  7. Transfer peaches to baking dish
  8. Spoon topping over fruit
  9. Sprinkle coarse sugar
  10. Bake 38–42 minutes
  11. Cool 15 minutes and serve

Notes

  1. Serve with vanilla ice cream
  2. Peeling peaches is optional
  3. Store refrigerated for up to 4 days
