Description

How to make homemade peach filling using fresh, frozen, or canned peaches. Perfect for pies, cakes, pastries, and dessert toppings.


Ingredients

  • 32 ounces peaches, peeled and sliced
  • 8 ounces water or peach juice
  • 6 ounces white sugar
  • 2 ounces brown sugar
  • 1/8 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 ounces ClearJel
  • 2 ounces cool water
  • 2 tablespoons lemon juice
  • 1 teaspoon clear vanilla extract

Instructions

  1. Peel and slice the peaches into cubes or slices.
  2. Whisk ClearJel and cool water together to make a slurry.
  3. Add peaches, water or juice, sugars, cinnamon, and salt to a saucepan.
  4. Cook over medium heat until peaches soften.
  5. Stir in the slurry and cook until thick and clear.
  6. Cook for one additional minute.
  7. Remove from heat and stir in lemon juice and vanilla.
  8. Cool before using or storing.

Notes

  1. Use fresh, frozen, or canned peaches.
  2. Peel peaches for the best texture.
  3. Substitute 1.5 ounces cornstarch for 2 ounces ClearJel if needed.
  4. Store in the refrigerator for up to 1 week or freeze for up to 6 months.
