Description

Creamy homemade queso dip made with cheddar, pepper jack, and cream cheese combined with sautéed peppers, garlic, and spices. Perfect for parties, game day snacks, or a quick appetizer.


Ingredients

  • 1 teaspoon cooking oil
  • 1/2 yellow onion diced
  • 1 poblano pepper deseeded and diced
  • 1 jalapeno pepper deseeded and diced
  • 4 cloves garlic minced
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1 1/2 cups half and half
  • 8 ounces sharp cheddar cheese finely grated
  • 4 ounces pepper jack cheese finely grated
  • 4 ounces cream cheese cubed
  • 1 can chopped green chiles undrained
  • 7 ounces fire roasted diced tomatoes drained
  • Juice from 1/2 lime
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • Sea salt to taste
  • Cayenne pepper to taste

Instructions

  1. Dice onion, poblano pepper, and jalapeno after removing stems and seeds then mince the garlic.
  2. Heat cooking oil in a skillet over medium heat and cook onion, jalapeno, and poblano with a pinch of salt for about 10 minutes until softened.
  3. Melt butter in a saucepan over medium low heat then whisk in flour to create a roux and cook about 5 minutes until lightly browned.
  4. Slowly whisk in half and half while stirring constantly until smooth.
  5. Bring mixture to a gentle simmer then reduce heat to low.
  6. Add shredded cheese gradually about 1/4 cup at a time stirring constantly until melted and smooth.
  7. Add cream cheese cubes and stir until completely melted.
  8. Fold in cooked onion and peppers, green chiles, tomatoes, cumin, chili powder, cayenne, and lime juice.
  9. Taste and adjust salt and spices as desired then remove from heat.
  10. Serve warm with tortilla chips or your favorite dipping foods.

Notes

  1. Grate cheese from a block instead of using pre shredded cheese for smoother melting.
  2. Add cooked chorizo or taco seasoned ground beef for a heartier dip.
  3. Top with fresh pico de gallo or chopped cilantro for extra color and flavor.
