Description

Buttery oatmeal bars filled with sweet-tart rhubarb, perfect for an easy dessert.


Ingredients

Scale
  • 2 cups flour
  • 2 cups oatmeal
  • 1 1/3 cups brown sugar
  • 1/2 tsp baking soda
  • pinch salt
  • 1 cup butter
  • 4 cups rhubarb chopped
  • 1/4 cup water
  • 1 cup sugar
  • 4 tbsp flour

Instructions

  1. Preheat oven to 350°F
  2. Mix dry ingredients together
  3. Cut in butter until crumbly
  4. Reserve 1 cup crumbs and press rest into pan
  5. Cook rhubarb with water and sugar until soft
  6. Remove liquid, whisk with flour, return and thicken
  7. Spread filling over crust
  8. Top with reserved crumbs
  9. Bake 30–35 minutes
  10. Cool completely before slicing

Notes

  1. Use frozen rhubarb if needed
  2. Adjust sugar based on tartness
  3. Cool fully before cutting
