Homemade Salsa for Canning is the ultimate way to preserve summer’s bounty in a jar. Ingredients

  • 6 cups (about 4 lbs / 1.8 kg) blended tomatoes

  • ¾ cup (115 g) red onion, chopped

  • 2 cups (300 g) bell peppers, chopped

  • ¼ cup (36 g) garlic, chopped

  • ½ cup (75 g) jalapeño peppers, chopped (de-seeded for milder salsa)

  • ¼ cup (60 ml) lime juice, freshly squeezed

  • 2 teaspoons paprika

  • 2 teaspoons sea salt

  • 3 tablespoons (38 g) granulated sugar

  • ¼ cup (60 ml) white vinegar (first portion)

  • ⅓ cup (80 ml) white vinegar (added later)


Instructions

  • Wash and stem tomatoes. Optionally blanch and peel them.

  • Blend tomatoes in batches and transfer to a large pot.

  • Chop onions, bell peppers, garlic, and jalapeños.

  • Add all chopped vegetables, lime juice, paprika, salt, sugar, and the first portion of vinegar to the pot. Stir well.

  • Bring to a gentle boil, then reduce heat and simmer uncovered for 1 hour, stirring occasionally.

  • Sterilize jars and keep them hot.

  • After simmering, stir in the second portion of vinegar.

  • Fill hot jars, leaving ½ inch headspace. Remove air bubbles, wipe rims, and seal with lids.

  • Process jars in a boiling water bath for 15 minutes.

  • Cool jars for 24 hours, check seals, then label and store.

Notes

Let salsa simmer uncovered for a richer, thicker texture.

Use crushed red pepper or hotter chilies to increase heat.

Always taste and adjust before canning.

Store sealed jars in a cool, dark place up to 1 year.

Refrigerate opened jars and consume within 7–10 days.
