Description

A comforting one-pan chicken and rice dinner with sweet honey, smoky BBQ sauce, tender chicken, and hearty rice. Ready in just 35 minutes, this recipe is family-friendly, full of flavor, and easy to customize with your favorite vegetables.


Ingredients

  • 1 lb (450 g) boneless, skinless chicken thighs or breasts

  • 1 cup (200 g) long-grain rice

  • 2 cups (480 ml) chicken broth

  • 1/2 cup (120 ml) BBQ sauce of choice

  • 1/4 cup (60 ml) honey

  • 1 tsp (3.5 g) garlic powder

  • 1 tsp (3.5 g) onion powder

  • 1/2 tsp (1.5 g) smoked paprika

  • Salt and black pepper, to taste

  • 1 cup (150 g) mixed vegetables, fresh or frozen

  • Optional: chopped green onions or parsley for garnish


Instructions

  • Cut chicken into bite-sized pieces and season with garlic powder, onion powder, smoked paprika, salt, and pepper.

  • Heat a large skillet or deep pan over medium heat. Sear chicken for 4–5 minutes until lightly browned.

  • Stir in rinsed rice and cook 1–2 minutes to toast lightly.

  • Add chicken broth, BBQ sauce, and honey. Mix well.

  • Stir in mixed vegetables. Bring to a boil, then reduce the heat to low. Cover and simmer 18–20 minutes until rice is tender.

  • Fluff with a fork, garnish with parsley or green onions, and serve hot.

Notes

Toasting the rice before simmering adds extra flavor.

Swap veggies with whatever you have on hand: peas, corn, carrots, zucchini, or bell peppers.

Let the dish rest covered for 5 minutes after cooking for fluffier rice.

Store leftovers in the fridge for up to 4 days or freeze for up to 2 months. Reheat with a splash of broth to keep it moist.
