Description
Honey BBQ Chicken Rice is a sweet and smoky one-pan dinner made with tender chicken, flavorful BBQ sauce, honey, and rice cooked together for a comforting meal.

- 1 lb boneless skinless chicken thighs or breasts
- 1 cup long grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables fresh or frozen
- Chopped green onions or parsley for garnish
Instructions
- Season chicken with garlic powder onion powder smoked paprika salt and pepper
- Heat oil in a large skillet over medium heat and sear chicken for 3 to 4 minutes per side until golden
- Remove chicken and set aside
- Add uncooked rice to the same pan and toast for 1 to 2 minutes while stirring
- Pour in chicken broth then mix in BBQ sauce and honey
- Return chicken to the pan and nestle it into the rice
- Bring to a gentle boil then reduce heat to low cover and cook for 15 minutes
- Add mixed vegetables on top cover again and cook for 5 minutes until rice is tender and chicken reaches 165°F
- Remove from heat and let rest for 5 minutes
- Fluff rice garnish with green onions or parsley and serve
