Description

Honey Chipotle Grilled Chicken Skewers combine sweet honey, smoky chipotle peppers, and savory chicken to create a flavor-packed, juicy dish perfect for any outdoor gathering. With a simple marinade, these skewers are easy to make and adaptable to your taste. Whether served as appetizers, in tacos, or with a side of rice, they promise a crowd-pleasing meal that’s both bold and satisfying.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs (cut into 1–1.5 inch pieces)

  • 3 tablespoons honey

  • 2–3 chipotle peppers in adobo sauce (with some adobo sauce)

  • 2 garlic cloves, minced

  • 2 tablespoons apple cider vinegar or lime juice

  • 2 tablespoons soy sauce

  • 1 teaspoon cumin

  • 1 bell pepper, cut into chunks (optional for skewering)

  • 1 onion, cut into chunks (optional for skewering)

  • Wooden skewers (soaked in water for 30 minutes)

Instructions

  • In a blender, combine honey, chipotle peppers, garlic, apple cider vinegar, soy sauce, cumin, and a pinch of salt and pepper. Blend until smooth.

  • Place the chicken in a resealable bag or bowl and pour in the marinade. Seal and refrigerate for at least 30 minutes or up to 2 hours.

  • Preheat the grill to medium-high heat (375°F–400°F).

  • Thread the marinated chicken pieces and vegetables (if using) onto the soaked skewers.

  • Grill the skewers over direct heat for 10–12 minutes, turning every 2-3 minutes, until the chicken reaches 165°F and is nicely charred.

  • Baste the skewers with extra marinade while grilling for more flavor.

  • Serve immediately with a side of rice, grilled veggies, or in tacos.

Notes

Add more chipotle peppers or a dash of cayenne pepper if you want a spicier version.

For a smoky flavor without chipotles, use smoked paprika.

Use tamari or coconut aminos for a gluten-free option.

Vegetables like mushrooms, zucchini, or pineapple can be added to the skewers for extra flavor and color.
