Description
Honey Roasted Peaches with vanilla, cinnamon, cloves, and nutmeg make a naturally sweet baked fruit dessert. Serve warm with yogurt, coconut cream, nuts, granola, or mint.

- 3 large ripe peaches, halved and pitted
- 1/4 cup raw honey, or pure maple syrup
- Seeds from 1 vanilla bean
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- Pinch of sea salt
- Optional toppings: Greek yogurt, coconut yogurt, whipped coconut cream, chopped walnuts, chopped pecans, granola, or fresh mint leaves
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a small bowl, whisk together the honey, vanilla bean seeds, cinnamon, cloves, nutmeg, and sea salt until smooth.
- Place the peach halves cut side up in a baking dish just large enough to fit them snugly.
- Spoon the honey syrup evenly over the peaches, coating the cut sides well.
- Bake uncovered for 25 to 30 minutes, or until the peaches turn golden, tender, and juicy.
- Let the peaches rest for 5 minutes, then spoon the pan syrup over the top.
- Add your favorite toppings and serve warm.
Notes
- Use ripe but slightly firm peaches so they hold their shape while baking.
- Pure maple syrup can replace honey in the same amount.
- Add crunchy toppings after baking so they stay crisp.
- Store leftovers with the syrup in an airtight container in the refrigerator for up to 3 days.
