Description

Fresh peaches, strawberries, honey, and a flaky pecan crust make this Honey Strawberry Peach Pie the perfect summer dessert.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 3/4 cup finely ground toasted pecans
  • 1 teaspoon kosher salt
  • 1 cup chilled unsalted butter
  • 1 large egg yolk
  • 1/3 cup cold buttermilk
  • 5 cups fresh sliced peaches
  • 2 cups fresh strawberries
  • 1/3 cup brown sugar
  • 1/2 cup all-purpose flour
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon bourbon
  • 2 tablespoons butter
  • 1 beaten egg
  • Coarse sugar for sprinkling

Instructions

  1. Combine flour, pecans, and salt in a large bowl.
  2. Cut butter into the flour mixture until pea-sized crumbs form.
  3. Whisk egg yolk with buttermilk and stir into the dough.
  4. Add extra buttermilk if needed until dough comes together.
  5. Divide dough into two disks and roll one into a pie crust.
  6. Place crust into a greased pie plate.
  7. Mix peaches, strawberries, brown sugar, flour, honey, vanilla, and bourbon.
  8. Spoon filling into the crust and add butter slices.
  9. Roll remaining dough and create a lattice top.
  10. Brush crust with beaten egg and sprinkle with coarse sugar.
  11. Chill pie for one hour.
  12. Bake at 350 degrees Fahrenheit for about 1 hour until golden brown and bubbling.
  13. Cool before slicing and serve with ice cream if desired.

Notes

  1. Toast pecans before grinding for better flavor.
  2. Tent the crust with foil if it browns too quickly.
  3. Allow the pie to cool fully before slicing for cleaner pieces.
  4. Frozen fruit can work if thawed and drained first.
