Description

A traditional Icelandic dessert with a buttery oat crumble and sweet-tart rhubarb filling, lightly spiced with cardamom.


Ingredients

Scale
  • 500 grams rhubarb
  • 50 grams sugar
  • 1 teaspoon vanilla extract
  • 135 grams rolled oats
  • 240 grams flour
  • 100 grams sugar
  • 50 grams brown sugar
  • 1 teaspoon cardamom
  • 3/4 teaspoon baking soda
  • 225 grams butter
  • 1 egg

Instructions

  1. Cook rhubarb with sugar and vanilla until soft then cool
  2. Pulse oats slightly and mix with flour sugars cardamom and baking soda
  3. Cut butter into mixture until crumbly
  4. Add egg and mix to form dough
  5. Press two thirds into pan
  6. Spread rhubarb compote
  7. Top with remaining dough
  8. Bake at 400F for 25 minutes
  9. Cool before serving

Notes

  1. Use fresh rhubarb for best flavor
  2. Do not over process oats
  3. Let cake cool fully before slicing
