Description

High Protein Italian Pasta Salad made with protein pasta, Italian meats, fresh vegetables, and light Italian dressing. Perfect for meal prep or a healthy lunch.


Ingredients

Scale
  • 8 oz protein or chickpea rotini pasta
  • 3/4 cup light Italian dressing
  • 1/2 red onion, chopped
  • 1 large bell pepper, chopped
  • 1 medium cucumber, peeled and diced
  • 8 oz smoked deli ham, chopped
  • 5 oz turkey pepperoni, chopped
  • 5 oz Italian dry salami, chopped
  • 4 slices ultra-thin provolone cheese, chopped
  • 1/2 cup feta cheese, crumbled
  • Fresh basil (optional)

Instructions

  1. Cook pasta in salted water until al dente, then drain and rinse with cold water
  2. Chop the red onion, bell pepper, and cucumber into small pieces
  3. Chop the ham, turkey pepperoni, salami, and provolone cheese
  4. Combine pasta, vegetables, meats, and cheeses in a large bowl
  5. Add feta cheese and Italian dressing, then toss gently
  6. Add fresh basil if using
  7. Refrigerate for at least 30 minutes before serving

Notes

  1. Chilling improves flavor
  2. Add extra dressing if salad dries during storage
  3. Store leftovers in an airtight container for up to 4 days
