Ingredients

Scale
  • 1 lb (450 g) Italian sausage

  • 1 onion, diced

  • 4 cups (950 ml) chicken broth

  • 2 cups (70 g) kale, chopped

  • 1 package (16 oz / 450 g) gnocchi

  • 1 cup (240 ml) heavy cream

  • Salt & pepper, to taste


Instructions

  • In a large soup pot, cook Italian sausage over medium heat, breaking it into crumbles. Drain excess fat if needed.

  • Add diced onion and cook 3–4 minutes until softened.

  • Pour in chicken broth, scraping the pot to release browned bits. Bring to a gentle simmer.

  • Stir in chopped kale and gnocchi. Cook 3–4 minutes, until gnocchi floats and kale is wilted.

  • Reduce heat and stir in heavy cream. Simmer gently for 5 minutes (do not boil).

  • Taste, season with salt and pepper, and serve hot with crusty bread.

Notes

Don’t overcook the gnocchi—remove from heat as soon as they float.

Use mild or spicy Italian sausage depending on your preference.

For a lighter version, substitute half-and-half or whole milk for the cream.

Add extras like mushrooms, sun-dried tomatoes, or Parmesan for more flavor.

Store leftovers in the fridge up to 3 days; reheat gently with extra broth or cream.

For freezing: prepare soup without gnocchi. Add freshly cooked gnocchi after reheating.
