Description
Creamy Jalapeno Popper Pinwheels filled with crispy bacon, cheddar cheese, softened jalapenos, and seasoned cream cheese. These chilled tortilla spirals make an easy make-ahead appetizer, lunch, or party snack.

- 4 large flour tortillas, about 10 inches each
- 16 ounces cream cheese, softened
- 8 ounces bacon, cooked and crumbled
- 4 medium jalapenos, seeded and finely chopped
- 1 cup shredded sharp cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Cook the bacon in a skillet over medium heat until crisp. Transfer it to a paper towel-lined plate, cool, and crumble.
- Cut the jalapenos lengthwise. Remove the stems, seeds, and pale membranes, then finely dice the peppers.
- Cook the diced jalapenos in a clean skillet over medium heat for 3 to 5 minutes, stirring often, until slightly tender. Let them cool.
- Add the softened cream cheese, jalapenos, bacon, cheddar cheese, salt, and black pepper to a large bowl. Stir until evenly combined.
- Lay one tortilla flat and spread one quarter of the filling evenly over it, leaving a small border around the edge.
- Roll the tortilla tightly from one side to the other, then wrap the completed log firmly in plastic wrap.
- Repeat with the remaining tortillas and filling.
- Refrigerate the wrapped tortilla logs for at least 1 to 2 hours, or overnight.
- Unwrap the rolls, trim the uneven ends, and cut each log into 1-inch slices with a sharp serrated knife.
- Arrange the pinwheels cut side up and serve chilled or slightly cool.
Notes
- Remove all jalapeno seeds and membranes for a milder appetizer.
- Keep a few seeds or add minced pickled jalapeno for additional heat.
- Cool the cooked bacon and jalapenos before adding them to the cream cheese.
- Chill the wrapped rolls before slicing so the spirals hold their shape.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezing is not recommended because the cream cheese and tortillas may change texture.
