Description

Khohop Chicken Stew is a savory homemade dish with tender chicken, slow-cooked onions, tomato, and fresh pomegranate seeds.


Ingredients

Scale
  • 2.2 lb chicken meat, cut into medium pieces
  • 6 medium onions, thinly sliced
  • 1 large pomegranate, seeded
  • 2 tablespoons unsalted butter
  • 2 tablespoons vegetable oil
  • 2 tablespoons tomato paste
  • 1 medium tomato, finely chopped
  • 1½ teaspoons salt
  • ½ teaspoon ground black pepper

Instructions

  1. Heat vegetable oil and butter in a large pot over medium heat
  2. Add onions and cook until very soft and lightly golden
  3. Add chicken and cook until lightly browned
  4. Stir in tomato paste and chopped tomato
  5. Season with salt and black pepper
  6. Cover and simmer on low heat until chicken is tender
  7. Add pomegranate seeds during last minutes of cooking
  8. Taste, adjust seasoning, and serve hot

Notes

  1. Serve with rice, mashed potatoes, or flatbread
  2. Allow onions to cook slowly for best flavor
  3. Store leftovers in the refrigerator for up to three days
