Khohop Chicken Stew is a savory homemade dish with tender chicken, slow-cooked onions, tomato, and fresh pomegranate seeds.
Ingredients

- 2.2 lb chicken meat, cut into medium pieces
- 6 medium onions, thinly sliced
- 1 large pomegranate, seeded
- 2 tablespoons unsalted butter
- 2 tablespoons vegetable oil
- 2 tablespoons tomato paste
- 1 medium tomato, finely chopped
- 1½ teaspoons salt
- ½ teaspoon ground black pepper
Instructions
- Heat vegetable oil and butter in a large pot over medium heat
- Add onions and cook until very soft and lightly golden
- Add chicken and cook until lightly browned
- Stir in tomato paste and chopped tomato
- Season with salt and black pepper
- Cover and simmer on low heat until chicken is tender
- Add pomegranate seeds during last minutes of cooking
- Taste, adjust seasoning, and serve hot

- Serve with rice, mashed potatoes, or flatbread
- Allow onions to cook slowly for best flavor
- Store leftovers in the refrigerator for up to three days
