Description

A sweet-tart strawberry rhubarb cobbler with a golden baked topping.


Ingredients

Scale
  • 4 cups diced fresh rhubarb
  • 3 cups sliced fresh strawberries
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 tablespoons unsalted butter, melted
  • 3/4 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Combine strawberries, sugar, and cornstarch; let sit 10 minutes
  2. Grease baking dish and spread rhubarb evenly
  3. Pour strawberry mixture over rhubarb
  4. Whisk dry topping ingredients together
  5. Mix wet ingredients and combine with dry
  6. Spread batter over fruit
  7. Bake at 350F for 60-65 minutes
  8. Cool slightly and serve

  1. Use ripe strawberries for best flavor
  2. Do not overmix batter
