Description

Soft Eastern European Lazy Dumplings made with cottage cheese. Quick, comforting, and perfect for breakfast or dessert.


Ingredients

Scale
  • 1 pound full-fat cottage cheese, well-drained
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon vanilla extract or a pinch of vanillin
  • 1/4 teaspoon salt
  • 1 large egg
  • 3 tablespoons all-purpose flour, plus more for dusting
  • Unsalted butter, for serving

Instructions

  1. Bring a large pot of lightly salted water to a gentle boil.
  2. In a large bowl, mix cottage cheese, sugar, vanilla, and salt until smooth.
  3. Add the egg and stir until fully combined.
  4. Gently mix in the flour until a soft dough forms.
  5. Divide dough, roll into ropes, and cut into pieces.
  6. Drop dumplings into boiling water and cook until they float.
  7. Simmer 1–2 minutes more, then remove and serve with butter.

Notes

  1. Drain cottage cheese well before using.
  2. Serve with sour cream, yogurt, honey, or berries.
  3. Refrigerate leftovers up to 2 days and reheat gently.
