Description

Cool, creamy Lemon Butter Pie with a buttery graham cracker crust and fresh lemon filling. Perfect for summer desserts and special occasions.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 4 tablespoons melted butter
  • 1/2 cup fresh lemon juice
  • 3 large eggs
  • 1 large egg yolk
  • 3/4 cup granulated sugar
  • 1 cup unsalted butter
  • Optional lemon zest for garnish

Instructions

  1. Preheat oven to 350°F and butter a 9-inch pie dish.
  2. Mix graham cracker crumbs with melted butter and press into pie dish.
  3. Bake crust for 8 minutes and cool completely.
  4. Whisk lemon juice, eggs, yolk, and sugar in a saucepan.
  5. Cook while stirring until mixture thickens and reaches 180°F.
  6. Strain the curd and cool slightly.
  7. Process curd with butter, adding one piece at a time until smooth.
  8. Spread filling into crust.
  9. Refrigerate at least 4 hours before serving.
  10. Slice and serve chilled.
