Description

A buttery Lemon Curd Shortbread Tart with a press-in crust, bright lemon curd filling, and a golden crumb topping made from the same dough.


Ingredients

Scale
  • 8 ounces very soft butter
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 3/4 cups all-purpose flour
  • 3/4 cup almond flour
  • 1 1/4 cups lemon curd
  • Powdered sugar, for dusting, optional
  • Baking spray, for the pan

Instructions

  1. In a medium-size bowl, whisk the very soft butter until smooth and creamy.
  2. Add the sugar, vanilla extract, and salt, then whisk again until well combined.
  3. Add the all-purpose flour and almond flour, then stir with a fork until the flour is incorporated and large crumbs begin to form.
  4. Spray a 9-inch tart pan or 9-inch cake pan with baking spray. If using a cake pan, line the bottom with parchment paper.
  5. Press about half of the dough evenly across the bottom and up the sides of the pan.
  6. Place the bowl with the remaining dough in the refrigerator.
  7. Position a rack in the middle of the oven, place a sheet pan on the rack, and preheat the oven to 325°F.
  8. Bake the bottom crust on the sheet pan for 10 to 14 minutes, until it begins to firm and turn pale golden at the edges.
  9. Remove the tart from the oven and let it cool for 10 minutes.
  10. Spread the lemon curd evenly over the bottom crust.
  11. Remove the remaining dough from the refrigerator, gently squeeze handfuls of the crumb mixture, and sprinkle large crumbs over the lemon curd.
  12. Return the tart to the oven on the sheet pan and bake for 25 to 30 minutes, until the topping is firm, crisp, and lightly golden.
  13. Transfer the tart to a wire rack and cool to room temperature.
  14. Remove the outer ring from the tart pan, dust with powdered sugar if desired, slice, and serve.

Notes

  1. Use very soft butter so the dough mixes smoothly.
  2. Do not overpack the flour, or the shortbread may turn dry.
  3. Cool the tart completely before slicing for the neatest pieces.
  4. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  5. Let chilled slices sit at room temperature for 15 to 20 minutes before serving.
