This Lemon Garlic Chicken is an easy weeknight dinner with a fast marinade, juicy chicken, and bright citrus flavor cooked with potatoes and broccoli for a complete one-pan meal.

Ingredients

Scale
  • 1 ½–2 pounds boneless skinless chicken thighs
  • 1 pound baby Dutch potatoes, quartered
  • 3 cups broccoli florets
  • 1/3 cup olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 1 tablespoon Dijon mustard
  • 1 tsp EACH salt, pepper, dried basil, dried oregano, onion powder
  • 1/2 tsp EACH paprika, ground cumin, dried thyme, sugar
  • 1 cup Greek yogurt or sour cream
  • 1/4 cup finely grated Parmesan
  • 1/4 cup chopped parsley
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped chives (optional)
  • 1 tablespoon minced dill (optional)
  • 1/4 tsp EACH salt, ground cumin
  • 1/8 tsp pepper

Instructions

  1. Preheat oven to 400 degrees F.
  2. Combine marinade ingredients and reserve 2 tablespoons.
  3. Add chicken to marinade and rest 20 minutes.
  4. Line a sheet pan with foil and spray with cooking spray.
  5. Toss potatoes with 1 tablespoon reserved marinade and bake 15 minutes.
  6. Add broccoli tossed with remaining marinade.
  7. Add chicken in a single layer on the pan.
  8. Bake 17–22 minutes until chicken reaches proper temperature.
  9. Mix yogurt Parmesan herb sauce and refrigerate.
  10. Serve chicken and vegetables with sauce.

Notes

  1. Use chicken thighs for juicy texture.
  2. Pound chicken breasts if substituting so they cook evenly.
  3. Cut potatoes into uniform sizes for even roasting.
  4. Bring chicken to room temperature before cooking.
  5. Yogurt herb sauce adds creamy flavor and ties the dish together.
  6. For grilling, cook over direct heat 4–6 minutes per side.
  7. For skillet cooking, brown first then cover to finish cooking.

Food safety: if you cook the chicken yourself, make sure it reaches an internal temperature of 165°F (74°C), as recommended by the USDA and Health Canada.
