Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 4 garlic cloves, minced
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Rinse and pat dry the shrimp, then season with salt and pepper.
  2. Trim the asparagus and cut into 2-inch pieces.
  3. Heat 1 tablespoon olive oil in a skillet over medium heat and cook garlic for 1 minute.
  4. Add shrimp and cook for 2 to 3 minutes per side until pink and opaque, then remove from skillet.
  5. Add remaining olive oil and cook asparagus for 3 to 4 minutes until tender-crisp.
  6. Return shrimp to the skillet and stir in lemon juice, zest, and butter.
  7. Cook for 1 to 2 minutes, then garnish with parsley and red pepper flakes before serving.

Notes

  1. Do not overcook the shrimp or they will become rubbery.
