Ingredients

  • 4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 package (3.4 oz) instant lemon pudding mix
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 4 eggs
  • 1 1/4 cups milk
  • 1 cup vegetable oil
  • 3 tbsp lemon juice
  • 2 cups shredded zucchini
  • 1/4 cup poppy seeds
  • 1 tbsp lemon zest

Instructions

  1. Preheat oven to 325°F and prepare loaf pans with parchment paper.
  2. Combine flour, sugar, pudding mix, baking soda, baking powder, and salt in a large bowl.
  3. Whisk eggs, milk, oil, and lemon juice in a separate bowl.
  4. Add wet ingredients to dry ingredients and stir gently.
  5. Fold in zucchini, poppy seeds, and lemon zest until combined.
  6. Pour batter into prepared pans.
  7. Bake large loaves for 50 to 55 minutes or mini loaves for 30 to 35 minutes.
  8. Cool in pans for 10 minutes, then transfer to wire racks.
