Description

Moist, dense, and delicious low sugar zucchini bread that is quick and easy to make.


Ingredients

Scale
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 tablespoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups grated zucchini, squeezed dry
  • 1 cup nuts, raisins, chocolate chips, or other add-ins

Instructions

  1. Preheat oven to 350°F.
  2. Mix melted butter and sugar.
  3. Add eggs, milk, and vanilla.
  4. Sift flour, baking soda, cinnamon, and salt into wet ingredients.
  5. Mix until combined.
  6. Fold in zucchini and add-ins.
  7. Transfer batter to lined loaf pan.
  8. Bake 60 to 75 minutes until a toothpick comes out clean.
  9. Cool slightly, then transfer to a wire rack.
  10. Slice and serve.

Notes

  1. Use almond milk for a dairy-free option.
  2. Replace sugar with honey if desired.
  3. Substitute part of the flour with whole wheat flour.
  4. Freeze slices for up to 3 months.
