Ingredients
-
1 can of mandarin oranges (drained) or 2 fresh mandarin oranges (peeled and segmented)
-
4 cups of fresh greens (spinach, romaine, or mixed salad leaves)
-
¼ cup sliced almonds or chopped walnuts
-
¼ cup dried cranberries (optional)
-
¼ cup crumbled feta or goat cheese (optional)
For the Dressing:
-
3 tablespoons olive oil
-
1 tablespoon honey
-
1 tablespoon apple cider vinegar or lemon juice
-
1 teaspoon of Dijon mustard
-
Salt and pepper to taste
Instructions
-
Wash the Greens:
Rinse the salad leaves under cold water. Dry thoroughly using a salad spinner or paper towels. -
Prepare the Oranges:
If using canned oranges, drain the liquid. If using fresh, peel and separate the slices. Remove any seeds. -
Make the Dressing:
In a small bowl, combine olive oil, apple cider vinegar, honey, and mustard. Season with salt and pepper to taste. Whisk until smooth. -
Mix the Salad:
Place the greens in a large bowl. Add the mandarin orange slices, nuts, dried cranberries, and cheese (if using). Drizzle the dressing over the salad. -
Toss and Serve:
Gently toss the salad to combine. Serve immediately for the best taste.
Notes
Fresh mandarin oranges are preferred when in season for their sweetness.
Add the dressing just before serving to avoid wilting the greens.
You can make the salad ahead by prepping the greens and oranges, then adding the dressing right before serving.
