-
2 cups all-purpose flour
-
1 tsp baking powder
-
1/2 tsp salt
-
1 cup butter, softened
-
1/4 cup sugar
-
1 cup dark brown sugar
-
2 large eggs
-
1 1/2 tsp vanilla extract
-
1/2 tsp ground cinnamon
For the Apple Filling:
-
2 large apples, finely chopped
-
2 Tbsp brown sugar
-
1 Tbsp butter
-
1/2 tsp vanilla extract
-
1/2 tsp ground cinnamon
For the Maple Glaze:
-
2 Tbsp butter
-
1/4 cup pure maple syrup
-
1/2 cup powdered sugar
-
1/4 tsp vanilla extract
-
1/8 tsp ground cinnamon
Instructions
-
Preheat oven to 350°F (175°C). Line an 11×7 inch baking pan with foil or grease well.
-
Prepare the apple filling: In a skillet over medium-low heat, cook chopped apples with brown sugar, butter, vanilla, and cinnamon for 3–4 minutes until just softened. Let cool.
-
Make the blondie batter: Cream softened butter until fluffy. Add sugar and brown sugar, beating until combined. Add eggs one at a time, then mix in vanilla and salt.
-
In a separate bowl, whisk together flour, baking powder, and cinnamon. Gradually fold into the wet mixture until just combined.
-
Spread half the blondie batter into prepared pan. Evenly layer the apple mixture on top. Spread remaining batter over the apples and smooth the top.
-
Bake for 25–30 minutes or until golden and a toothpick comes out with a few moist crumbs.
-
Make the maple glaze: In a saucepan, melt butter with maple syrup, cinnamon, and vanilla. Remove from heat and whisk in powdered sugar. Let sit 8–10 minutes to thicken slightly.
-
Pour glaze over slightly cooled blondies. Let set before slicing and serving.
Notes
Use tart apples like Granny Smith or Honeycrisp for more flavor depth.
For extra chewiness, don’t overbake.
Glaze thickens as it cools—if too runny, wait a few more minutes before pouring.
These bars can be frozen individually for up to 3 months.
