Description
Sweet grilled peaches caramelized with maple syrup and topped with buttery almond cookie crumbs for an easy summer dessert.

- 3/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 3 tablespoons toasted almond meal
- 1/8 teaspoon baking powder
- 1/8 teaspoon salt
- 3 tablespoons light butter, melted
- 1 teaspoon pure vanilla extract
- 6 large firm-ripe peaches, halved and pitted
- 1 1/2 tablespoons maple syrup
- Extra maple syrup for serving
- Vanilla ice cream for serving
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Combine flour, sugar, almond meal, baking powder, and salt in a medium bowl.
- Add melted butter and vanilla extract, then mix until crumbs form.
- Spread crumbs onto the baking sheet and bake for 10 minutes.
- Rotate the tray and bake another 8 minutes until golden and crisp.
- Allow crumbs to cool completely.
- Heat a grill pan or grill over medium-low heat and lightly grease it.
- Brush peach halves with maple syrup.
- Place peaches cut-side down on the grill and cook for about 10 minutes until caramelized.
- Serve peaches warm with extra maple syrup, vanilla ice cream, and almond cookie crumb.

- Store leftover crumb topping in an airtight container for up to one week.
- Use firm-ripe peaches for the best texture on the grill.
