Description

This Marinated Cucumber, Tomato and Onion Salad is the ultimate crisp and tangy summer side dish. Quick to prep and full of fresh garden flavor, it’s marinated in a sweet and zesty vinaigrette that pairs beautifully with grilled mains. Perfect for BBQs, potlucks, or everyday warm-weather meals.


Ingredients

  • 3 medium cucumbers (~600 g), peeled and sliced 0.6 cm thick

  • 1 medium white onion, sliced into thick rings

  • 3 medium tomatoes, chopped

  • 120 ml (½ cup) vinegar (white, apple cider, or rice)

  • 50 g (¼ cup) granulated sugar or sugar substitute

  • 240 ml (1 cup) water

  • 2 tsp salt

  • ½ tsp coarse black pepper

  • 2 tbsp vegetable or olive oil

  • ½ tsp dried basil

  • ½ tsp dried parsley


Instructions

  • In a large bowl, combine sliced cucumbers, onion, and tomatoes.

  • In another container, whisk vinegar, sugar, water, salt, pepper, oil, basil, and parsley until sugar dissolves.

  • Pour marinade over vegetables and toss to combine.

  • Cover and refrigerate for at least 2 hours.

  • Serve chilled, with or without excess marinade.

Notes

For crunchier salad, drain marinade before storing leftovers.

Red onion adds sweetness and color if substituted.

Use honey, agave, or stevia for a lower-sugar option.

Best flavor develops after chilling overnight.
