Description

Cold marinated mackerel cured in a tangy Tom Yum based marinade with onions, bay leaves, and peppercorns.


Ingredients

Scale
  • 2 to 3 whole mackerel, cleaned and cut into pieces
  • 4 1/4 cups water
  • 1 medium onion, thinly sliced
  • 2 bay leaves
  • 1 tablespoon mixed peppercorns
  • 3 1/2 tablespoons salt
  • 1 tablespoon granulated sugar
  • 1 1/2 to 2 tablespoons Tom Yum paste

Instructions

  1. Clean the mackerel thoroughly and cut into serving-size pieces
  2. Combine water, salt, sugar, bay leaves, peppercorns, onion, and Tom Yum paste in a saucepan
  3. Bring the marinade to a boil and stir until salt and sugar dissolve
  4. Remove from heat and let the marinade cool completely
  5. Place mackerel pieces in a non-reactive container
  6. Pour cooled marinade over the fish until fully submerged
  7. Cover and refrigerate for at least 24 hours before serving

Notes

  1. Best served cold with boiled potatoes or rye bread
  2. Adjust Tom Yum paste for preferred spice level
  3. Store refrigerated for up to 3 days
