Description

Tender marinated mushrooms with onion, dill, and a light vinegar dressing served cold as an appetizer or snack.


Ingredients

Scale
  • 1.1 pounds fresh white mushrooms
  • 4 1/4 cups water
  • 1 teaspoon salt for boiling
  • 1 medium onion thinly sliced
  • 3 sprigs fresh dill
  • 1 garlic clove minced
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt for marinade
  • 1 1/2 tablespoons granulated sugar
  • Black ground pepper to taste
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon whole-grain mustard

Instructions

  1. Clean and prepare mushrooms.
  2. Boil mushrooms in salted water for 5–7 minutes.
  3. Drain mushrooms well.
  4. Mix onion, dill, garlic, vinegar, salt, sugar, pepper, olive oil, and mustard.
  5. Add warm mushrooms and toss gently.
  6. Refrigerate at least 2 hours before serving.

Notes

  1. Cremini mushrooms work well as a substitute.
  2. Adjust vinegar and sugar to taste.
  3. Store refrigerated up to 5 days.
