Description
Tender marinated mushrooms with onion, dill, and a light vinegar dressing served cold as an appetizer or snack.
Ingredients

- 1.1 pounds fresh white mushrooms
- 4 1/4 cups water
- 1 teaspoon salt for boiling
- 1 medium onion thinly sliced
- 3 sprigs fresh dill
- 1 garlic clove minced
- 2 tablespoons apple cider vinegar
- 1 teaspoon salt for marinade
- 1 1/2 tablespoons granulated sugar
- Black ground pepper to taste
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon whole-grain mustard
Instructions
- Clean and prepare mushrooms.
- Boil mushrooms in salted water for 5–7 minutes.
- Drain mushrooms well.
- Mix onion, dill, garlic, vinegar, salt, sugar, pepper, olive oil, and mustard.
- Add warm mushrooms and toss gently.
- Refrigerate at least 2 hours before serving.
Notes
- Cremini mushrooms work well as a substitute.
- Adjust vinegar and sugar to taste.
- Store refrigerated up to 5 days.
