Creamy Marry Me Tuscan Chicken Soup combines tender chicken, spinach, parmesan, and Italian herbs in a velvety broth for a comforting and flavorful meal.

Ingredients

Scale

1 teaspoon olive oil

pounds boneless, skinless chicken breasts or thighs

2 teaspoons Italian seasoning

Salt and pepper to taste

½ cup each diced carrots, celery, and onions

¼ cup diced sundried tomatoes

3 garlic cloves, minced

¼ cup flour

2 tablespoons tomato paste (optional)

68 cups chicken broth

6 ounces pasta shells

1 cup heavy cream

½1 cup grated parmesan reggiano

3 cups fresh spinach

Instructions

1. Heat olive oil and cook chicken with seasoning until browned.

2. Add vegetables and garlic; sauté until fragrant.

3. Stir in flour and optional tomato paste.

4. Gradually whisk in chicken broth, then bring to boil.

5. Add pasta and simmer until tender.

6. Stir in cream, spinach, and parmesan; simmer 5 minutes.

7. Adjust seasoning and serve hot.

Notes

Start with 6 cups broth for thicker texture; thin later if needed.

Avoid overcooking pasta to prevent mushiness.

Store up to 4 days and reheat with added broth.
