Description
Marry Me Chicken Tortellini combines tender chicken, sun-dried tomatoes, and cheese-filled tortellini in a rich, creamy sauce that cooks in one skillet.
Ingredients
1 (19 oz) bag frozen cheese tortellini
2 tablespoons olive oil
1½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
½ teaspoon black pepper
½ teaspoon Italian seasoning
½ teaspoon paprika
2 tablespoons butter
½ cup sun-dried tomatoes in oil, drained and sliced
3 teaspoons minced garlic
1 cup low-sodium chicken broth
2 cups heavy cream
1 teaspoon Italian seasoning
1 teaspoon black pepper
1 teaspoon paprika
1 cup finely shredded parmesan cheese
2 cups chopped baby spinach
Instructions
1. Season chicken with black pepper, Italian seasoning, and paprika.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, 6–8 minutes. Remove and set aside.
3. Reduce heat to medium-low and melt butter. Saute garlic and sun-dried tomatoes for 30 seconds.
4. Add chicken broth, heavy cream, Italian seasoning, black pepper, and paprika. Whisk until the sauce begins to bubble. Slowly whisk in parmesan until melted.
5. Place chicken, spinach, and tortellini in the skillet. Stir and let simmer for 5 minutes until spinach wilts.
6. Garnish with parsley and extra parmesan before serving.
Notes
Cut chicken evenly so it cooks uniformly and absorbs flavor.
Add red pepper flakes for a mild kick.
Let the tortellini rest a few minutes before serving to thicken the sauce.
Prepare chicken and sauce ahead for easier meal prep.
