Description
These delicious cookies are made with browned butter and loaded with oats, chocolate chips, and white chocolate chips.
Ingredients
1 cup (2 sticks / 227 g) unsalted butter
1 ¼ cups (250 g) light brown sugar
½ cup (100 g) granulated sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
2 cups (256 g) all-purpose flour
1 cup (90 g) old-fashioned oats
½ teaspoon baking soda
1 teaspoon kosher salt
¼ teaspoon ground cinnamon
1 cup (168 g) white chocolate chips*
1 cup (168 g) semi-sweet chocolate chips*
Instructions
1. In a medium saucepan over medium-low heat, melt the butter to create browned butter. Watch closely and stir until chestnut brown.
2. Add the brown sugar and granulated sugar to the warm pan and stir until smooth. Chill for 10 minutes.
3. Preheat oven to 325°F and line two baking sheets with parchment paper.
4. Stir in the eggs and vanilla.
5. Add flour, oats, baking soda, salt, and cinnamon. Mix to combine.
6. Fold in white chocolate chips and semi-sweet chocolate chips.
7. Scoop dough with a 2-tablespoon scoop and press slightly.
8. Bake 11–13 minutes until edges turn golden. Cool on rack.
Notes
Do not overbake.
Cookies stay soft for days when stored airtight.
