Description

This Mediterranean Salad is a quick, refreshing mix of cucumber, tomato, red onion, fresh herbs, lemon juice, and olive oil, perfect as a light side dish or vegetarian meal.


Ingredients

  • 1 large cucumber, diced
  • 2 to 3 medium tomatoes, diced
  • 1/2 red onion, finely diced
  • 2 tablespoons chopped cilantro or mixed fresh herbs
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 teaspoon salt
  • Fresh cracked black pepper, to taste

Instructions

  1. Dice the cucumber, tomatoes, and red onion into small cubes.
  2. Add the diced vegetables and chopped herbs to a large salad bowl.
  3. Pour in the olive oil and lemon juice.
  4. Season with salt and black pepper.
  5. Mix well and let the salad rest for 10 to 15 minutes before serving.

Notes

  1. Soak diced red onion in cold water for 10 minutes to mellow the flavor.
  2. Serve at room temperature or lightly chilled.
  3. Best enjoyed fresh but keeps well for up to 2 days.
