Description

Mexican Coleslaw is a creamy and colorful slaw packed with cabbage, black beans, corn, cilantro, and taco seasoning dressing. Perfect for BBQs, potlucks, and quick summer meals.


Ingredients

  • 14 ounce bag coleslaw mix
  • 1/2 cup red bell pepper diced
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup grilled or skillet-charred corn
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeño minced
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 1/2 tablespoons taco seasoning
  • 2 tablespoons lime juice

Instructions

  1. In a large mixing bowl combine coleslaw mix, diced red pepper, black beans, grilled corn, cilantro, and minced jalapeño.
  2. In a small bowl whisk together mayonnaise, sour cream, taco seasoning, and lime juice until smooth.
  3. Pour the dressing over the cabbage mixture and stir well until evenly coated.
  4. Chill briefly before serving for best flavor.

Notes

  1. Grilled or charred corn adds deeper flavor.
  2. Chill the slaw for 30 minutes before serving for better texture.
  3. Adjust jalapeño for preferred spice level.
