Description

Mexican Cucumber Lime Salad is a refreshing, zesty side dish made in just 5 minutes. Crisp cucumbers are tossed with a tangy lime dressing, fresh cilantro, and a touch of heat from jalapeño and crushed red pepper. Perfect for summer meals, cookouts, or taco nights, it’s light, healthy, and full of flavor.

Ingredients

Scale
  • 1 jalapeño, seeded and finely diced

  • 2 garlic cloves, finely minced

  • 3 tbsp fresh lime juice (45 ml)

  • 1/4 tsp crushed red pepper (0.6 g)

  • 1/2 tsp salt (3 g), or to taste

  • Freshly ground black pepper, to taste

  • 3 tbsp olive oil (45 ml)

  • 2 cucumbers, very finely sliced

  • 4 tbsp fresh cilantro, minced (approx. 6 g)

Instructions

  • In a medium bowl, mix diced jalapeño and minced garlic.

  • Add lime juice, crushed red pepper, salt, and black pepper.

  • Slowly whisk in olive oil until the dressing emulsifies.

  • Slice cucumbers thinly (use a mandolin if possible) and toss with the dressing.

  • Stir in fresh cilantro until evenly coated.

  • Serve immediately for crispness, or refrigerate up to 2 hours before serving.

Notes

Slice cucumbers as thinly as possible for the best texture.

Adjust spice level by removing or keeping jalapeño seeds.

Swap cilantro with parsley if preferred.

Chill the serving bowl for an extra refreshing flavor.

Best served fresh, but leftovers can be kept up to 24 hours.
